Thai Turkey Meatballs

Ingredients

For the Meatballs:

  • 3/4 cup fat free milk 6 oz
  • 1/2 cup panko bread crumbs 35g
  • 4 cloves garlic minced
  • 2 teaspoons ground ginger
  • 2 tablespoons soy sauce or coconut aminos
  • 1 teaspoon fish sauce
  • 2 tablespoons red curry paste
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 pounds lean ground turkey 97/3

For the Curry Sauce:

  • 1 tablespoon coconut oil or any oil
  • 1 cup diced bell peppers 130g
  • 1/2 cup diced yellow onion 70g
  • 1 cup fat free milk 8 oz
  • 1 1/4 cups chicken broth 10 oz
  • 1 tablespoon corn starch or arrowroot powder
  • 1/2 cup plain non-fat Greek yogurt (113g)
  • 1 tablespoon red curry paste
  • 2 tablespoons minced basil

Instructions

  • Preheat oven to 400 degrees and line a sheet pan with parchment paper.
  • Combine all meatball ingredients, except for the ground turkey, in a medium size bowl. Let soak at least 5 minutes.
  • Add the ground turkey and combine well.
  • Using a large cookie scoop (or your hands) form the meat mixture into meatballs of any size (I made 16 large meatballs). Bake in the oven 15-20 minutes (depending on the size you made your meatballs), or until the internal temperature of the meatballs reaches 165 degrees.
  • While the meatballs bake, begin making the curry sauce. Heat up the oil in a large pan over medium-high heat. Add the bell peppers, onion, and some salt and pepper. Cook 5-7 minutes until veggies are soft.
  • Add the milk and 1 cup of the broth.
  • In a small bowl mix the remaining 1/4 cup of broth with the corn starch. Pour into the sauce pot. Bring sauce to a simmer and reduce heat to medium-low. Let it simmer 5-10 minutes until it thickens.
  • In a small mixing bowl combine the Greek yogurt with 1/4 cup of the hot curry sauce. Mix it well and add another 1/4 cup of the hot sauce. Repeat 3-4 times before adding all the yogurt mixture into the large sauce pan.
  • Stir in the red curry paste and basil.
  • Add in the cooked meatballs and serve over rice or veggies.

Notes: A 330g serving should be approximately 170g of meatballs plus 160g of sauce.
